Easy and Delicious Spicy Seafood Stuffing With Jonah Crab
I’ve been CRAVING seafood stuffing during quarantine. I came up with this recipe after finding a few recipes and then pairing them down to reduce the amount of groceries I would have to buy. Thankfully, I had most of the ingredients on hand (white wine? oh yeah, I got plenty!).and this recipe came out GREAT!
While I bought 12 jonah crab claws that were already cooked and scored (see pictures below) I urge you to get a 1/2lb of picked jonah crab meat from your monger unless you want a project that is a little messy. Remember, you can always call your monger and place a special order if you’re not sure they’ll have it on hand (See What You Can - And Can’t - Ask From Your Fishmonger)
Cooking Time: 30 minutes
Yield: about 5- 6 cups of stuffing
Versatility: can store in an airtight container in the coldest part of your fridge for 3-4 days or can freeze tightly in a bag
Ingredients:
1/2 c. white onion, diced
1/2 c. red bell pepper, diced
1/2 c. green bell pepper, diced
1/2 c. celery, diced
1 Tsp Cajun seasoning (to start)
1/4 tsp Cayenne pepper
2 c. Ritz crackers, crushed
1/4 c. seasoned bread crumbs
1 - 1/4 c. cooked Jonah crab meat (about 8.5 oz or 1/2 lb of meat from ~ 12 crab claws)
1 large garlic clove
2 eggs, beaten
5 Tbs. butter
1/3 c. white wine or sherry
Salt and pepper
To Make:
Add onion, bell peppers, and celery together in a pan with 1 Tbs butter. Season with salt and pepper. Let the vegetables saute and sweat until they’re soft.
Once soft, season the vegetables with Cajun seasoning and cayenne pepper. Let it cool together.
Meanwhile, pick through the jonah crab meat carefully and remove any hard pieces. Place all picked through crabmeat in a bowl and set aside.
In another bowl, combine crushed cracker pieces, breadcrumbs, wine or sherry, and 4 tbs of melted butter. Grate in 1 large garlic clove using a grater/microplane or mince it. Mix together and let soak for 5 minutes.
After the cracker mixture soaks, add sauteed vegetables, and crab meat to the cracker mixture. Stir to combine.
Taste for flavor. Does it need more heat or more salt and pepper? It all depends on your Cajun seasoning and your palate.
Once the flavor is right for you, add the two beaten eggs and combine one last time.
Now it’s ready! This soft stuffing is perfect for making stuffed flounder fillets, patted over a seafood casserole before it gets baked, or simply crumbled over fish fillets before they’re set under a broiler.

Good for you! Breaking the claws were difficult at first, but you’ll get the hang of it. An extra pair of strong hands, claw crackers, or a mallet would be helpful for this project.
